Simple Chicken Dinner
Ingredients:
10 Chicken legs (drum sticks and thighs) with skin and bones
6 garlic cloves
½ bunch parsley
½ lemon juice
¼ cup white wine
2 tbs butter
Seasoning:
Salt/Pepper
¼ tsp Sumac
1.5 tbs Herbs de Provence
2-3 tbs olive oil
Instructions:
Heat your oven to 450 degrees Fahrenheit. While the oven is preheating, place the chicken legs on parchment paper on a baking sheet and score each one with a sharp knife. Next, drizzle some olive oil, and sprinkle salt, pepper and herbs de Provence on the chicken. Place the baking sheet in the oven to roast until golden, and internal chicken temperature reads 165 degrees Fahrenheit.
While the chicken is roasting prepare the sauce by heating olive oil in a skillet and briefly frying minced garlic. As soon as you smell the aroma of garlic heating up in olive oil, which usually takes less than 30 seconds, add the wine to stop garlic from burning. Let the wine cook off for a minute or two and then melt your butter in the same pan. Mix it all together and throw in roughly chopped parsley. Once your chicken is ready and plated, carefully not to splash yourself, ladle all of the sauce onto the chicken. Enjoy!
Health Benefits:
Chicken legs are a great source of lean protein, supplying on average 25-30 grams of protein per each leg, which is essential for muscle growth, repair, and maintenance. Chicken legs also support immune function and help regulate blood sugar levels, as well as provide iron for red blood cells. This meal is satisfying and reheats well the next day.
