GF Turkey Meatballs
Ingredients:
3 lbs ground turkey
3 eggs
1 large onion
3 garlic cloves
1 bunch parsley
1 cup parmesan cheese
1 tbs ketchup
1 tbs tomato paste
Seasoning:
1 tbs salt
1 tbs basil
1 tbs oregano
½ tbs thyme
½ tbs fennel
Crushed black pepper
3 tbs vegetable oil
Instructions:
Crack three eggs into a large food processor, then add the onion, garlic, and parsley. Blend until the mixture reaches a smooth, uniform consistency. Transfer to a bowl and stir in the cheese, turkey, and all seasonings. Mix gently, being careful not to overmix.
Heat vegetable oil in a pan over medium heat. Gently place the hand-shaped meatballs, about the size of a ping pong ball, into the pan. Fry until golden brown on one side, then flip them over. Reduce the heat and continue frying until the other side is equally golden and crispy. Plate and serve.
