No Mayo Coleslaw

Ingredients:

10 oz green cabbage (shredded)

10 oz carrots (shredded)

¼ sweet onion (minced)

1 small apple (finely sliced)

2 celery sticks (finely sliced)

1 tbsp dill (roughly chopped)

1 tbsp parsley (roughly chopped)

1 tbsp cilantro (roughly chopped)

1/3 cup roasted halved peanuts

Seasoning:

Lemon juice of 1 lemon

1/4 cup olive oil

1 tablespoon red wine vinegar

¼ teaspoon oregano

¼ teaspoon Italian seasoning

Salt and Pepper


Instructions:

Toss the first 8 ingredients in a large bowl and season with salt and pepper.

Add olive oil, red wine vinegar and lemon juice and then taste and add more as needed.

You can make coleslaw and dressing ahead of time, but don’t mix them together until right before serving.  Toss in peanuts at the end, taste and adjust salt and pepper as needed.
